SWEET POTATO CASSEROLE

Canadian Thanksgiving is in a week, so I thought I'd share a yummy way to prepare Sweet potatoes for the Holidays.
(Double it if you have many people coming for the Holidays)

1 lb.sweet potatoes, peeled and cut into 1/2" cubes
2 tbsps. sugar
2 eggs
1/2 cup milk
1 tsp. vanilla

Preheat over to 400.
Place potatoes in the top of a double boiler over boiling water. Cover and steam for 10 minutes until soft. Drain and mash.
Combine potatoes and the other 4 ingredients in a bowl. Season to taste with salt and a pinch of pepper.
Mix well and pour into a greased pan.

Topping:

1/4 cup brown sugar
2 tbsps. flour
1/2 cup chopped pecans
1 tbsp. melted butter

Combine the topping ingredients in a bowl and spread on top of the first mixture.

Bake for 30 minutes or until brown.

Enjoy!!
